GUEST CHEF: CALUM FRANKLIN

THE KING OF PIES IS COMING TO CATHERINE ST

Big, big news. On 3 & 4 June, we’re collaborating with self-confessed ‘pastry deviant’ and former executive chef at the Holborn Dining Room, Calum Franklin, for an exclusive five-course dinner packed with the very best British seasonal produce.

AN UNBEATABLE MENU

Calum’s five-course feast starts with a springlike plate of carrots, two ways, with creamy burrata, crispy chickpeas and a tarragon vinaigrette. Go on to enjoy a beef Wellington (handmade by the pie master himself) with buttery pastry, mushroom duxelles, bresaola and a light beef jus. Veggie? Calum has you covered with his beetroot and squash Wellington.

Guests will share spring Jersey Royals, salted and rolled in warm butter and fresh mint, and hispi cabbage with silky emulsion and toasted hazelnuts.

THE CLOSING ACT

Go out with a bang! Dessert is Calum’s take on jelly and ice cream; a decadent ice cream sandwich made with Genoise sponge, fresh strawberries and elderflower jelly. Gorgeous, summery and light. We can’t wait to dive right in.
